Banana Pancakes with a Maple Butter Glaze

What kind of pancake person are you? When it come to pancakes I usually keep it simple. I once made some sweet potato ones (five years ago the idea of making sweet potato pancakes seemed so crazy and radical!), but since then my pancakes always fall in the buttermilk camp with not much else. Which, by the way, I think is totally fine. Buttermilk pancakes are like a little black dress – always classic, always in style.

But we’re not talking about buttermilk pancakes today. No, today we’re upping our pancake game with some banana slices and a warm and decadent maple butter glaze. These pancakes are something you might see served up at a charming bed & breakfast where they’re made to order and served hot along with a cup of french press coffee and a bowl of fruit on the side. The good news? You don’t need to find a bed & breakfast – you can make these this weekend!

What I love about these pancakes are the caramelized banana slices. The batter has mashed banana in it, but I also added some slices once the pancakes were cooking. When I flipped the pancakes over the banana slices caramelized and formed a light crust. Adding two to three slices per pancake means a little bit of warm caramelized banana is in every bite. So good.

But let’s be serious – what makes these extra special is the glaze. Can we talk about this glaze?

 If we’re going to put butter and maple syrup on our pancakes let’s just go that extra step to make a glaze – it’s sort of an all-in-one topping. Melted butter, maple syrup, and a little brown sugar all come together to make a rich glaze. When you pour it the glaze oozes over the pancakes and drips off the edges in a wonderfully decadent manner that makes you think, I should so not be eating this, but I’m going to because I deserve it! It’s a special weekend, dammit!” Remember, we don’t make these pancakes every weekend so it’s okay!

A word of caution: these pancakes could induce a food coma so I wouldn’t plan on operating any heavy machinery, engaging in any activities that require math skills, or conversing with others in a meaningful way after indulging. These are best served on a Saturday or Sunday when the only plans are… no plans.

Banana Pancakes with Maple Butter Glaze

Banana pancakes with a rich and decadent maple butter glaze. Perfect for a special weekend breakfast!
Recipe type: Breakfast & Brunch
Serves: 4

Ingredients
  • For the Pancakes
  • 3 bananas, peeled
  • 2 tablespoons melted butter
  • 1 tablespoon brown sugar, packed
  • 1 egg, beaten
  • 1 cup milk
  • Juice from ½ a lemon
  • 1 cup flour
  • ½ teaspoon cinnamon
  • ½ teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 tablespoon vegetable oil (for cooking the pancakes)

  • For the Glaze
  • ¼ cup butter
  • ¼ cup real maple syrup
  • 2 tablespoons brown sugar
Instructions
  1. In a large bowl, first mash one of the bananas (I use a potato masher) until it breaks down. It’s okay if it’s a little lumpy. Add the melted butter, brown sugar and stir well to combine. Next, add in the egg, milk and lemon juice and stir again until all the ingredients are well combined. Set the bowl aside.
  2. In a medium bowl whisk the flour, cinnamon, ground nutmeg, baking powder, and salt together. Add the dry ingredients to the wet ones in several batches, stirring until just combined after each batch. Don’t worry if there are a few lumps in the batter – just be sure to not over mix otherwise the pancakes won’t have the right texture.
  3. Heat one tablespoon of vegetable oil on a griddle or in a large non-stick pan over medium heat. I used a generous quarter cup of batter for each pancake. Top each pancake with 2-3 banana slices before flipping over. The pancakes, depending on the heat level, will take approximately 3-4 minutes to cook. Adjust the heat as needed to prevent the pancakes from browning too fast. You can keep the pancakes warm in a 200 degree oven while you make the glaze.
  4. To make the glaze, first melt the butter in a small sauce pan over medium heat. Add the brown sugar and stir until incorporated. Add the maple syrup and bring the mixture to a boil for about 2 minutes. Remove from the heat and serve immediately with the pancakes.
