Bacon Cheeseburger with Balsamic Onions

A few months ago the folks at Just Jan’s asked if I wanted to try a sampling of their sweet and savory spreads and, after reading Jan’s story on her website, I happily agreed. What started out as a hobby has turned into a business for her and there’s nothing I love more than supporting small business – especially when that business makes a great product.
So the box arrived, I unpacked it and placed the cute jars filled with all sorts of sweet jams and savory spreads on my kitchen counter where they sat… and sat… and sat for about a month. Right before my trip to California I finally found the time to taste the samples and it was the balsamic onion savory spread that really caught my attention. Within minutes I knew instantly how I wanted to use it…
The sweet and tangy balsamic onion spread is the perfect match for crispy bacon, melty gruyere cheese and a beefy hamburger patty. In less than 15 minutes I had a juicy bacon cheeseburger in hand with a nice dollop of the balsamic onion spread hidden inside.
So quick. So delicious. So full of flavor.

- 2 slices thick cut bacon
- ¼ pound ground beef
- Salt and pepper
- 2 tablespoons balsamic onion spread (see note)
- ¼ cup grated gruyere cheese
- 1 hamburger bun
- In a medium sized pan or cast iron skillet cook the bacon over medium high heat until crispy. Remove and let it drain on a paper towel. Reserve a tablespoon of the bacon fat in the pan.
- Form the ground beef into a patty slightly larger than the size of the bun. Season both sides with salt and pepper. Press the center of the patty in so it creates an indentation (this will keep the burger from puffy up while it cooks).
- Cook the patty on each side (until internal temperature reaches 160 degrees for medium doneness) over medium high heat in the same pan you cooked the bacon. Once you’ve flipped it top the burger with the balsamic onions and the grated cheese. If needed, cover the pan with a lid so the cheese fully melts. Remove the burger from the pan.
- Warm the bun in the hot pan for a minute or so before topping with the patty and bacon.
