Roasted Sweet Potato Wedges

Roasted sweet potato wedges are easy to make and a great side dish for steak, chicken or pork.

There are plenty of main dish recipes on this site – 15 pages of them, in fact – but I’ve noticed that side dishes just aren’t getting the love as much. I’ve been wondering why that is – are side dishes not as important in life? Are the piddly three pages of dinnertime companions just after thoughts or “filler” posts for those days I just can’t think of something more substantial?

It’s a shame, really, because side dishes deserve a little time on the main stage, too.

These roasted sweet potato wedges are not a new thing in our house – I’ve lost count of how many times I’ve cranked up the oven to roast up a batch, but I’ve never thought to share this simple, yet satisfying side dish with all of you. There have been other sweet potato dishes – like pancakes, salads, and enchiladas – but none that celebrate the sweet-like-candy tubers in their simplest form.

Tossed with olive oil, herbs, salt, and pepper before roasting them in a hot oven until they have softened and caramelized is, by far, my most favorite way to prepare them.

So let’s take a moment to recognize the importance of side dishes in our lives, shall we?

Roasted Sweet Potato Wedges

Ingredients
  • 3 medium-sized sweet potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 2 teaspoons herbs de Provence
  • salt
  • pepper
Instructions
  1. Preheat the oven to 425 degrees. Line a baking sheet with tin foil and lightly spray it with cooking spray.
  2. Toss the sweet potato wedges in the olive oil and herbs. Season the wedges with a few pinches of salt and pepper and lightly toss again.
  3. Place the wedges on the baking sheet with one of the non-skin sides down on the sheet. Roast the potatoes for 20-25 minutes. Remove them from the oven and carefully turn each wedge over so the skin side is facing down. Return them to the oven and let them roast another 10 minutes before serving.
