Cold Sesame Noodles with Chicken
As is often the case with change, bad habits often ensue. For example, post-break-up one might mindlessly dial-up Chinese food only to realize two weeks later that the only thing consumed in the last two weeks were greasy pot-stickers, sticky sweet and sour chicken, and salt lick-style vegetable lo mein. The refrigerator is a graveyard of half-empty take-out boxes and the dishwasher is a sea of glasses because who needs plates when you can eat directly from the delivery cartons?
I remedied this most recent delivery binge of mine after I found a Takeout-Style Sesame Noodles recipe from the New York Times. The only problem? Some of the ingredients are not so easy to find in a normal grocery store, so I made some simple adjustments and now I have a 15-minute takeout-style cold noodle dish to ward off the delivery temptation.
Like some other things in life, these noodles are best served cold. While the noodles (aka spaghetti) are boiling mix up the simple sauce and chop the bell pepper and cucumber. I tossed in some rotisserie chicken, but feel free to dress it up with whatever floats your boat – leftover steak or extra veggies like broccoli or snap peas would be delicious.

These simple cold sesame noodles take just 15 minutes start to finish. Adapted from the New York Times recipe for takeout style sesame noodles my recipe uses easy to find ingredients.

Ingredients
- 1 pound spaghetti
- 3 tablespoons toasted sesame oil, divided
- 3 1/2 tablespoons soy sauce
- 2 tablespoons Chinese rice vinegar
- 2 tablespoons oyster sauce
- 1 tablespoon smooth peanut butter
- 1 tablespoon sugar
- 1 tablespoon finely grated ginger
- 2 teaspoons sriracha
- Half a cucumber, peeled, seeded, and diced
- 1 bell pepper, diced
- 1 cup shredded chicken (optional)
Instructions
- Bring a pot of water to a boil and cook the spaghetti according to package directions. While the spaghetti is cooking combine 2 tablespoons of the sesame oil with the vinegar, oyster sauce, peanut butter, sugar, ginger, and sriracha in a large bowl.
- Once the spaghetti is cooked, drain it and rinse it under cold water until cool. Add the spaghetti to the sauce, add the chopped vegetables and chicken (if using). Toss it all together and serve.
