Easy Cucumber Salad

This easy cucumber salad is great as a side dish or just a healthy snack. Odds are you already have most of the ingredients on hand in your kitchen.
- 2tablespoons white vinegar
- 1/2tablespoon olive oil
- 1tablespoon chopped fresh parsley
- 1tablespoon chopped fresh dill
- 1teaspoon minced garlic
- 1tablespoon white sugar
- 1teaspoon salt
- black pepperto taste
- 1 cucumbersliced or chopped

Whisk together the vinegar, olive oil, parsley, dill, garlic, sugar, pepper and salt in a bowl; add the cucumber and toss to coat.

Cover and chill in refrigerator 2 to 4 hours. Stir well before serving.
