A Delicious Frozen Treat With Added Health Benefits From Green Tea
Looking for a new favorite summertime dessert? Look no further! This honey sweetened Green Tea Granita is the perfect frozen treat. The mellow flavor of the tea pairs well with the spicy kick of freshly grated ginger. The tart lemon juice is pleasantly countered by the sweet honey.
Most of the frozen treats you’ll find at your local grocery store are loaded with artificial colors, artificial flavors, corn syrup, preservatives and excess sodium. Making your own allows you to choose wholesome ingredients for you and your family. Isn’t your health worth a little bit of extra effort?
Unlike most frozen desserts, you don’t need an ice cream maker or any other extravagant equipment. This tasty treat is made with normal household items. It is also fun to make; kids enjoy scraping the Granita and watching it turn to “snow” right in front of their eyes. It is a great opportunity to introduce children to healthier, homemade snacks. Even picky eaters are likely to eat something they helped make!
Ingredients For Four Servings
1 1/2 cups of filtered water
2 tablespoons of loose whole leaf green tea
1 tablespoon of freshly grated ginger
1/4 cup of honey
1 large organic lemon (you will be using the skin as well as the juice, so you definitely want to buy organic)
Special Equipment
A shallow, freezer safe baking dish
A metal fork
Directions
Combine the water and ginger in a medium-sized saucepan over a low flame. Bring the mixture to a boil (slowly for optimal flavor extraction) then turn off the heat and cover. Let it steep for 10 minutes or longer.
Reheat to 180 degrees F. If you don’t have a thermometer handy, look for small bubbles forming in the bottom of the pan. Remove from heat, add the loose green tea and stir. Let steep for 2 to 3 minutes. Strain into the baking dish. Add the honey and stir until well combined.
Let the mixture cool to room temperature then add the juice and zest of the lemon. Stir well. Letting the mixture cool before adding the lemon allows the final product to have a fresher, un-cooked flavor.
Move to the freezer. Scrape a fork across the mixture every 30 minutes until it is completely frozen. Exactly how long it takes depends on how cold your freezer is. In a very shallow pan, it should be ready in about 2 hours.
Tips and Suggestions
This recipe is very easy to double, triple or quadruple for a crowd. It also stores well in sealed containers, so don’t worry about leftovers.
Try using different spice combinations. Cardamom, cinnamon, and mace are some of my favorite for this recipe (other than the ginger, of course!) Just follow the same steeping instructions for whatever spice or spices you decide to use.
