Asparagus Recipes are made asparagus which is a spring vegetable. Asparagus belongs to the lily family and is a flowering perennial plant. It is generally grown as a temperate crop but also has the potential of being grown as a tropical crop. It is a creeper similar to thorny plants and is available in three colors, which are white, green and purple. Owing to its delicate flavor and diuretic properties, Asparagus Recipes have been used culinary and medicinal purposes for thousands of years. Asparagus is cultivated throughout the world as a vegetable crop and is native to places in most of Europe, north Africa and west Asia.
The origin of this vegetable is unknown however, it is believed that it may have originated from some place in the eastern Mediterranean area. Its recipes are found in the oldest surviving recipe books such as Apicius from the third A.D which is a collection of Roman cookery recipes. Ancient Egyptians, Greeks, and Romans ate fresh asparagus when it was in season and dried it for use in winter.
The shoots of asparagus turn woody and strongly flavored once the buds start opening, thus they are eaten when they are young. This vegetable is cooked in a variety of ways in cuisines throughout the world. Asparagus is typically served as a vegetable side dish or as an appetizer. Green asparagus is popular across the globe while white asparagus is widely grown in Belgium, France, Netherlands and Germany. Purple asparagus, which was originally produced in Italy, is still grown in countries like New Zealand and United States. It is cooked in different ways like stir frying or grilling. In the French style of cooking, asparagus is prepared by boiling or steaming and is served with mayonnaise, Parmesan cheese, hollandaise sauce or melted butter. In the Asian cuisine, it is stir fried and served with chicken, beef, shrimp or is wrapped in bacon and served. Asparagus is also served raw as salad. It can also be stored for years as pickle and is called marinated asparagus.
Asparagus is low in calories and a healthy option. It is rich in vitamin B6, magnesium, calcium and zinc. It is also a good source of dietary fiber, vitamin A, vitamin C, vitamin E, vitamin K, thiamin, riboflavin, niacin, folic acid, rutin, iron, phosphorus, potassium, copper, manganese and selenium. Pharmaceutical companies also use asparagus to prepared drugs which are used to treat diseases such as diarrhea, cough, herpes, dysentery, and stomach ulcers.
