Chicken Salad Sandwich

Is it Friday yet? It’s busy at work this week and I’m flying solo at home, so dinners have turned into very simple affairs. Case in point: the chicken salad sandwich I had last night for dinner. It was packed full of fresh flavor with the addition of three different kinds of herbs – fresh parsley, basil and dill. Some diced up celery added some crunch and it was all mixed together with some leftover grilled chicken, mayo, a healthy squeeze of lemon, and just a touch of Dijon mustard. Oh, and salt and pepper, of course. I sandwiched the salad between two toasted bagel slices along with some diced avocado, thinly sliced red onion and some lettuce. Then I watched Barefoot Contessa reruns until it was time to go to bed. Heaven.

In other news, I was super excited that Amazon recently launched their Unlimited service, which is basically like Netflix for books. Finally! I immediately signed up for the 30 day trial period and downloaded a book. I also scanned some recent reviews and the opinions are mixed so time will tell if it’s worth the monthly fee, which is $9.99 a month after the first 30 days. With over 600,000 titles to choose from I’m sure there are at least a few good options. Three cheers for reading!
