Scrambled Eggs with Ricotta & Chives

What you see here is my favorite way to make scrambled eggs. Oh, and some toast that didn’t really get toasted enough because I got impatient.

It happens sometimes.

What makes these eggs so special, you ask? It’s the ricotta cheese. It melts into the eggs while they cook and makes them all dreamy-creamy, which is what you want from scrambled eggs, right? The eggs are made even better with some chives that add a fresh flavor without being overwhelming.

What I do is whisk together 2 eggs, some chopped chives (just a sprinkle) and a healthy tablespoon of ricotta cheese before cooking the mixture over very low heat just until the eggs firm up and are no longer runny. After adding some salt and pepper I like to scoop the eggs on to the toast,
sort of like a breakfast bruschetta.

And that’s my favorite way to make scrambled eggs.
