Meals of the Week, December 3rd to 9th 2023
Here I am again, its Sunday and I have another meals of the week post to share with you. That’s right, every main meal that I enjoyed over the past seven days. Seven whole days of delicious main dishes that hopefully will get your taste buds to tingling as much as they did mine!
I am bound and determined to be a person who cooks as much for myself as possible. Just because I am on my own that doesn’t mean that I need to be relegated to eating from boxes and cans or frozen dinners! And my meals don’t need to be boring either!
All too often we can find ourselves falling into a rut when it comes to preparing meals for small families, or even larger families. A bit of inspiration can go a long way and that is what I hope these posts are for you. A bit of inspiration that will hopefully get you into the kitchen cooking and enjoying your meals!
Nothing is overly complicated either. I did enough of complicated when I cooked at the Manor. Not that I didn’t enjoy it, but I am retired now and simplicity is the order of the day when it comes to my regular day in and day out cookery!
Simple and easy don’t have to be boring however. Cook along with me and I’ll put some interest into your life, at least meal-wise!
SUNDAY, December 3rd. - Dinner at Cindy’s
Usually on Sunday’s I have supper with my family at my sister’s place. This week was no different, except that we didn’t have a roast dinner. This week we had Cabbage Rolls with Italian Sausage on the side, rice and green beans. It was our own homemade Italian Sausage. It was all very good. I think my sister included the sausage just in case someone objected to cabbage rolls. As if anyone would!
It is so nice to be included in these meals. If you are wanting to try a great recipe for Cabbage Rolls. Do check out MINE. They are fabulous and freeze really well. People used to always ask me to bring my cabbage rolls to Pot Luck Suppers, which was a huge testimony to their deliciousness!
MONDAY, December 4th – Honey Ham Biscuit Sliders
I had some canned biscuits and some sliced ham which needed using up and so on Tuesday I made Honey Ham Biscuit Sliders, which I enjoyed along with some salad. I did cut the recipe in half and thought I could enjoy some on the day and then a cheeky couple for lunch the next day. by Biscuits I mean North American style Biscuits not cookies. In the UK, you could use plain or cheese scones I guess. I am sure they would be just as delicious.
These are lovely little biscuit sandwiches, filled with gooey melted cheese and a bit of spark from the mustard, saltiness and smoke from the ham and a touch of sweet on top from the honey. Simple and altogether quite delicious.
TUESDAY, December 5th – Vintage Menu Madness
On Tuesday I did my Vintage Menu Madness for December and probably the last one I will do for this year. This week I did a mix of recipes from a few different books. Here was my menu.
HOMEMADE APPLE SAUCE
CORN SCALLOPED POTATOES
FRENCH STYLE GREEN BEANS
SWEET MIXED PICKLES
DATE PUDDING
Everything was delicious, but the real star of the show was the date pudding. Dates and toasted pecans in a butter tart like gooey bake, with a crisp topping. Scrumptious!
WEDNESDAY, December 6th – Dinner out with Dad
On Wednesday nights I have supper out with my father and his friend Hazel. Some weeks my sister joins us. This week she did not. Usually I will have fish and chips, but this week I decided to splurge and I had a steak with mushrooms, onions and a baked potato. It was really good and worth the splurge.
The recipe I am sharing is for Herbed Garlic Butter Steak & Mushrooms. This delicious entree always yield a delicious, tender and well flavored perfectly cooked piece of meat. I recommend you have a baked potato with this and perhaps a nice green salad on the side!
THURSDAY, December 7th – Bread and Cheese Omelet
Another cold day, but a busy one. I didn’t fancy anything really complicated for my tea and so I made myself a delicious Bread and Cheese Omelet. This was simple and just hearty enough to be filling without needing anything else. A salad would go very nicely.
Eggs for supper are always a great option. They are not that expensive. They are nutritious and they are very adaptable to a huge variety of ways of cooking them. I only ever very rarely will have eggs for breakfast, but eggs for supper? That is a most welcome supper for me! Quick, easy and delicious.
FRIDAY, December 8th - Nova Scotia Fish Chowder
It was quite cold on Friday. I went out shopping with my sister and by supper time I was frozen and ready to have something hot and comforting. A bowl of soup was in order and so I used a piece of my frozen haddock to make myself some Fish Chowder. I did cut the recipe in half because there is just me and I enjoyed it simply with some crackers.
This chowder is light and delicious, and yet at the same time hearty. Creamy and filled with plenty of fish and potato. It is a Nova Scotia (where I live) specialty!
SATURDAY, December 9th – Chicken & Mushroom Pot Pie
It is rare that I will eat at my sister’s twice in one week, but she picked up a Costco Chicken Pot Pie yesterday and invited me over to enjoy some of it with them on Saturday night. You know how big those pies are! They are huge.
As a recipe alternative I am sharing my Chicken & Mushroom Pot Pie. This is a delicious chicken pie with carrots and mushrooms in a lush, rich and creamy gravy. There is no bottom crust on this pie. Just a top crust and to be honest you don’t really need one. If you wanted a heartier meal you could add some boiled baby potatoes and perhaps some coleslaw on the side. Delicious!
And there you have it! My meals of the week for the past week. Not so shabby and quite varied. I am so lucky that I enjoy cooking so much (not to mention eating!) I get to do it all over again next week! I don’t think I eat that badly at all. I hope you will be inspired to want to cook and eat some of the same things in the week ahead! Lets all get cooking!
