Whole30 Kale Potato Chicken Soup

Regardless if you are doing Whole30 or not, this Kale Potato Chicken Soup is big on flavor and nutrition. I no longer follow the Whole30 plan, but I understand why people do. It’s a great way to focus on more nutrient-dense foods. I, however, found it too restrictive mostly because I really like beans and cheese.

Whole30 Kale Potato Chicken Soup

Whole30 Kale Potato Chicken soup is big on nutrition and flavor. It’s low calorie, low carb, low fat, and super easy to make.  

Ingredients

• 1 tsp olive oil
• 1 baking potato, cubed (~330g)  
• 1 sweet potato, cubed (~330g)  
• 4-5 carrots, chopped (~300g)
• 6 cups chicken broth
• 1 bag frozen kale (14oz)
• 10 oz cooked chicken (~300g)

Instructions

Heat the oil in a large soup pot and brown the potatoes and carrots a bit.

Add the broth and kale. Bring to a low boil.

Add the chicken, lower to a simmer and cover.

Cook for at least 30 minutes, allowing the kale to cook down and the potatoes to cook through.

Notes

• I left the skin on the potatoes.
• This is definitely one of those the-longer-it-cooks-the-better-it-gets type of dishes. The potatoes start to break down and all the flavors merge making a fabulous bowl of wholesome yumminess.
• I’m not going to lie, a little parmesan and crusty bread would be perfect compliments if you are not following Whole30
