Preserving Herbs With Salt – Taste Summer All Year Round

Fresh herbs add a wonderful flavor to your food like nothing else. But what if there are no fresh herbs around? What if it is in the dead of winter, and your cat knocked over the pot of basil you were growing in the windowsill, and you really are in the mood for some lasagna? You don’t need to run to the store and buy some basil because you can preserve your herbs.  At puregracefarms.com they show a method that you can preserve herbs using sea salt.

All you need is sea salt, herbs and a blender soon you will have some beautifully colored aromatic salt. Use 1/4 cup of herbs to coarse sea salt and blend it up. When it is blended, spread evenly the herb/salt mixture on a baking sheet to dry. Cover with a cheesecloth and be sure to keep it out of direct sunlight (the sun will bleach the salt back to white). After about a day, blend again to break up the clumps.

Store in an airtight container in a cool and dry place to  keeps its flavor. The shelf life for optimum flavor is about six months, right about the time when you will have fresh herbs again!  Not only is this salt be great to cook with but put it in a pretty jar and it can be used as a body scrub as well.
