Creamy Cauliflower Soup | Gluten Free & Dairy Free

There was a time when I thought my youngest was allergic to dairy (turns out it was a reaction to baby wipes, not dairy) and I worked on creating dairy-free versions of our favorite recipes. We love The Pioneer Woman’s Cauliflower Soup but I needed something dairy and gluten free; so my version, Creamy Cauliflower Soup, was born.

My whole family loves it and so do my friends. People are always asking me for the recipe so I thought I’d share it on the blog.

Creamy Cauliflower Soup | Gluten Free & Dairy Free

Creamy, delicious and packed with vegetables you won’t even miss the dairy!

Cook Time

45 minutes

NGREDIENTS

5 tbs. olive oil divided
1/2 onion chopped
4 medium-large carrots peeled and chopped
2 celery stalks cleaned and chopped
1 head cauliflower cored and roughly chopped
1 tbs. dried parsley or 3 tbs. fresh, chopped
1 quart chicken broth
4 tbs. arrowroot powder
2 cups Almond Breeze Original Almond Milk Do not substitute with other brands of almond milk, Almond Breeze Original tastes the best in this recipe.
2 tsp. real salt or to taste
1 tsp. Mrs. Dash Garlic & Herb Salt-Free Seasoning
1/4 tsp. black pepper
fresh parsley optional, for serving
sour cream optional, for serving
shredded cheese optional, for serving

INSTRUCTIONS

Melt 4 tbs. of olive oil in a medium-sized, heavy pot over medium heat. Then add the onions and cook until translucent, about 3 minutes.
Add carrots and celery, stir and cook a couple more minutes.
Add in cauliflower, stir, cover and cook on low for 15 minutes.
Add parsley and chicken broth and simmer for 10 minutes.
Meanwhile, make the dairy-free white sauce. Melt 1 tbs. of olive oil in a medium saucepan over medium heat then whisk in the arrowroot powder. Pour in almond milk and cook on medium-high whisking the sauce until thickened, about 3 minutes.
Pour the white sauce into the soup and stir.
Add the salt, Mrs. Dash’s seasoning and black pepper and simmer for 15 minutes.
Done! Serve in bowls and top with fresh parsley.
