Courgette balls are a good way of using courgettes or marrows. This easy to follow recipe which produces crispy balls which can be enjoyed hot or cold as an appetizer, snack or enjoyed with a tomato sauce with pasta.
2 tins of chickpeas
6 garlic cloves
1 cup of oats
2 cups or 700g of shredded courgette
2 teaspoons of basil and oregano
4 tablespoons of nutritional yeast
juice of a lemon
Once balls formed bake at 190c for 30 minutes salt and pepper to taste
