Maslenki cookies-Bulgaria

There are the countries I am dying to visit (invoking a little NCAA, division one if you will) and then there are the countries I would like to see if I ever had the chance (division two). Bulgaria is one of those countries in my “division two” grouping. I know basically nothing about this Southeastern European nation except that it’s capital is Sofia and they have some pretty spectacular looking churches. However, considering its geographical location, it’s a country that by all accounts is brimming with history with having neighbors like Greece, Macedonia, and Turkey for starters.

As much as I would like to say, “oh, I’m going to Bulgaria next year,” sadly, I am not. But I did chose a recipe from Bulgaria for my week 2 of exotic Christmas cookie baking. Maslenki are jam-filled Christmas cookies and while lard usually receives top-billing on the ingredients list, it’s okay to substitute butter instead (that’s what I did). They turned out very tasty and not at all “sugar heavy” like some cookies tend to.

I also want to say I feel quite the “grown up” between my wine cookies last week and now my jam filled cookies this week.
