This is how potassium glutamate E621 looks like- a preservative used in large quantities in almost every kind of food, also well known in restaurants, with the purpose of intensifying the food taste.

White crystal powder, which looks like sugar or salt. Mixed in water, it tastes like meat soup. It can be added to any kind of food. Potassium glutamate leads to increased appetite, overeating and overweight.

The potassium glutamate boosts brain cells, acting like drug, it easily enters the blood and brain and it leads to change of the genes responsible for the sense of taste.

Potassium glutamate is contained in every sausage, salami, hot dog, potato chips, dehydrated soup mixes, canned food, beer and many more. The safe dose for an adult is 1,5 g per day, and for children- no more than half a gram. Today, all around the world, 200.000 tons of potassium glutamate are being produces every year. The symptoms of E621 overdose are called “syndrome of Chinese restaurant”, manifested by drowsiness, migraine, visual impairment, vertigo, hormonal imbalance, nausea and weakness, chest pains etc.

The substance was discovered in 1907, in Japan, by Ikeda Kikunae, who performed many experiments and discovered that it enhances the taste of the food. Not only that it enhances the natural taste of products, but it also improves the taste of preservatives, junk food, frozen products.


Potassium glutamate is very popular in USA, because it sells more food. In some experiments, where mice were regularly given food with E621, they lost their sight after a while. One of the negative consequences of potassium glutamate use is that it affects the tongue receptors, so in time their food perception worsens.

Very often, because of the potassium glutamate which makes the food taste better, we cannot control ourselves and stop eating unhealthy food, like potato chips, chocolate, ready meals etc. It causes addiction, on a subconscious level it makes us prefer products which contain the preservative. This is good only for the manufacturers, because their sales are going up.


Food manufacturers benefit from using E621, because this way they are reducing the production costs, in the same time making the low-quality products look good, which must be stopped.

Be careful when buying groceries, read the labels and the ingredients lists. Use natural spices for cooking.
