Vegan news you can use (12/26/11) + Christmas Eve Dinner Recipes
Good morning! It’s Monday and I’m thrilled — because I’m not going back to work until NEXT Monday!
I have some fun things planned this week, including trips to two of my favorite vegan restaurants in NYC. Today, though, I plan to stay in my pajamas as long as possible. I think I’ll bake some bread (and when I say “bake” I mean in the bread machine) and make some Mac-Grain & Cheeze in the rice cooker. Just for fun.
On this day-after-major-holidays I thought I would do a more playful version of vegan news — starting with this awesome video by Ari Solomon, who I absolutely adore. He is the founder of A Scent of Scandal — playful, soy-based candles (the “Original Sin” candle scent is figleaf. Hilarious!) and he is the Hollywood correspondent for Our Hen House.

My husband Dave made a crunchy salad of romaine lettuce, cucumber, red pepper and green olives with a mustard dressing. While these dishes were served for a holiday feast, they are easy, everyday dishes that are delicious and healthy and demonstrate that eating vegan is simple, flavorful and absolutely not complicated.
