Mint Chocolate Frozen Yogurt

Do you have any plans for St. Patty’s Day? We don’t.

Well, we have plans but it’s things like getting my hair cut and buying groceries…so no fun St. Patty’s Day-related items on the list.

Plus, I don’t think I do St. Patty’s day right. I’ve never had green beer, never made corned beef, never cooked a big pot of guinness beef stew. As long as I wear green, I think I’m okay. That’s right, right?

My only way of celebrating each year is having something mint chocolate because, well, mint is green. And mint is delicious. And, when you mix it with chocolate…it’s one of my favorite things in the whole world.

It’s probably a total cop out to spend St. Patty’s Day eating stuff with mint in it, but it’s the only way I know how, so I’m sticking with it.

I’ve made mint brownies and cookies and thin mint mochas. I’ve thrown fresh mint leaves into lemonade, muddled them with strawberries, and skewered them with berries and feta. You could say I’m a little obsessed with mint…and you’d be right.

But my favorite mint item of all time is (and has always been) Andes mint candies. That’s basically the only reason I go to Olive Garden anymore and I’m pretty sure that’s the first place I ever had an Andes mint. They’re just perfect – creamy, smooth, minty, rich.

My best idea yet? Tossing crushed Andes mints into this chocolate frozen yogurt. And bonus! It doesn’t take much time to make, you only get one bowl dirty, and – except for the mints themselves – this froyo is fat free. That means it’s totally okay for breakfast.

Mint Chocolate Frozen Yogurt
Makes: 6-8 servings

Ingredients:

• 2 cups Stonyfield plain yogurt
• 1/3 cup Dixie Crystals sugar
• 1/3 cup fat free evaporated milk
• 2 Tbsp Divine cocoa
• 1 tsp vanilla bean paste
• 1/2 cup mint chocolate candies, chopped

Directions:

1. Get your ice cream maker ready, based on your directions.
2. In a large bowl, mix the yogurt, sugar, milk, cocoa, and vanilla bean paste together.
3. Pour the yogurt mix into the ice cream machine and turn it on. Let the frozen yogurt begin to freeze and set up, about 10-15 minutes. 
4. Add the mint chocolate candies to the frozen yogurt and let the machine run for another 3-4 minutes.
5. Serve right away if you like a softer consistency. Pour into an airtight container and freeze if you want the frozen yogurt to set up a bit more.

PS: If you don’t have an ice cream maker, you can use the ziploc bag method OR you can go even easier and buy some good quality plain or vanilla frozen yogurt. Then just let it soften, add your mix-ins, and refreeze before serving.
