Deliciously Simple Prosciutto Arugula Salad Rolls

Have you ever had a taste revelation? Like, a real smack you in the face, spit on your neck, kick ya in the crotch kind of revelation? In a good way?

When I first discovered the importance (and flavour) of good food and started going to farmer’s markets 5 years ago I was not prepared for the taste revelations that awaited me. Sure, I knew that if you spent X amount of dollars on something you could easily get better quality ingredients but I had no idea that you could literally taste and feel the difference of those ingredients. I also didn’t realize that if you buy locally in season from farmers in your area that you could get those same quality ingredients for much less than what you find in the grocery store. Evidently because farmers have surpluses of particular foods during particular seasons, the excess reserves cause the price to go down. Go figure, right?

Don’t get me wrong – there are SOME things that are going to cost more than the grocery store. Like strawberries. Or garlic. Or eggs. And maybe honey. But with good reason. They’re difficult to grow, time consuming to harvest and ultimately more valuable. Strawberries aren’t supposed to be 2 plastic pints for $3.00 – you’re being tricked. Tricked by cheap food. You might only be spending 3 bucks, but you aren’t getting the flavor, nutrients or goodness of a real, slightly more expensive strawberry. If you absolutely must have your Summer strawberries (like I do),  just cut back in other areas one day a week – like not eat meat every day or skip that one extra latte so you can afford juicy, ruby red, gorgeous sun-kissed real berries.

The same goes for garlic. Farm fresh garlic is not cheap and it may surprise you when you see it at the market for the first time. But it’s also insanely juicy and doesn’t have the same bland, woody texture and unpleasantly sharp flavour that supermarket garlic does. The first time I had farm fresh garlic I just about died. In fact, I made this noise:

Arrrrggggggoooooohhhhhruuuuummph!

Right? Doesn’t get much better than “Arrrrggggggoooooohhhhhruuuuummph”. Seriously – say it out loud.

The same goes for arugula. Brand new, fresh from the ground arugula really was a real smack me in the face, spit on me neck, kick me in the crotch kind of taste revelation. I had no idea lettuce could taste so good. And unlike garlic or strawberries or honey, it won’t cost you a latte. Right now, I’m eating bags of the stuff. Bags!

This deliciously simple prosciutto arugula salad rolls recipe is so super simple and quick to come together yet so deliciously tasty, you’re gonna pee your pants. It would make an incredibly tasty and easy appetizer or side at your next Spring BBQ or dinner party.

Deliciously Simple Prosciutto Arugula Salad Rolls

Ingredients
  1. 8 Slices of Prosciutto di Parma
  2. 1 Pear, cored and cut into 8 wedges
  3. 4 Oz Blue cheese, crumbled
  4. Big handful of farm fresh arugula
  5. Good quality Extra Virgin Olive Oil
  6. Coarse sea salt & fresh cracked black pepper
  7. Optional: Organic local honey to drizzle
Instructions
  1. Super simple: Toss the arugula in a bowl with a drizzle of olive oil and salt and pepper to taste.
  2. Lay the prosciutto on a board, layer the ingredients on top, roll & if desired, skewer with adorable tooth picks and drizzle with honey.
  3. Eat.
