Apple & Sage Pork Sausage Rolls

I have a confession to make: I didn’t cook a turkey at Thanksgiving. I know – seems so wrong, doesn’t it? Let me explain…

For the last couple of years I’ve skipped the turkey thing in November because I’ve adopted a new tradition – English Christmas dinner. You see, I live with a special someone who grew up eating turkey at Christmas (plus a whole lot of other things that I’d never heard of, but more on that later) and, as much as I like turkey, I can’t think about cooking it for two major holidays back-to-back. Nope, not gonna happen.
So I’m afraid this one goes to Team England and now we enjoy our turkey all dressed up on Christmas day. Sorry, Thanksgiving.

By the way, I’m still all thankful on Thanksgiving. We don’t skip the holiday we just have a new way of celebrating it (note to self: guilty much?)

Let me set my turkey issues aside for a moment and get to the real point.

I’ve learned a few things about British food being with Steve and, somewhat surprisingly, have discovered there are many things to love about it. So when I floated the idea of sharing some of our English Christmas dinner recipes on this here blog the first words out of his mouth were, “Sausage rolls! We must make sausage rolls!”  So we did. I wanted to test drive the whole thing first, so we whipped up a batch over Thanksgiving – if you follow me on Instagram you might have seen the picture. That first batch was pretty plain, but totally addicting. A plate of sausage rolls doesn’t last long – it’s just too darn easy to eat them all in one sitting.

Fast forward to this week and sausage roll round two. This time I added some diced green apple and sage – flavors that go really well with the sausage – and was really happy with the end result. These little guys are perfect as appetizers or snacks – they don’t take that long to make and you can totally customize them. Plus, you can make a big batch and freeze them unbaked. When a craving strikes (or unexpected guests show-up) all you have to do is t0ss them onto a sheet pan and pop them in the oven. So easy.

Apple & Sage Pork Sausage Rolls

Tasty bite-sized pork sausage rolls with apple and sage – make extra because these will disappear fast!
Recipe type: Appetizer
Serves: 24

Ingredients
  • 2 sheets puff pastry (I box), thawed
  • 1 pound pork sausage, casings removed (see note)
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 1 cup diced green apple (about ½ an apple)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 egg
  • 1 tablespoon milk
Instructions
  1. Preheat oven to 350 degrees
  2. Line a baking sheet with tin foil
  3. In a medium bowl mix the pork with the herbs, salt and pepper, and diced apple
  4. In a small bowl beat the egg and milk together
  5. Unfold both puff pastry sheets and cut each into thirds (follow the perforations)
  6. Divide the pork mixture into 6 equal parts
  7. Roll the divided pork into sausage shapes, equal to the length of the puff pastry strip
  8. Lay each sausage in the middle of each puff pastry strip
  9. Brush the edges of the puff pastry with the egg and milk mixture
  10. Wrap the puff pastry around the sausage
  11. Lightly press the seams to ensure there is a seal
  12. Brush the top of each roll with the egg and milk mixture
  13. Cut each roll in half, then each half in half, then each quarter in half until you have 8 equal pieces
  14. Place the sausage rolls about an inch apart on the baking sheet
  15. Bake at 350 degrees for 20-30 minutes, or until the pastry is nicely browned on top
  16. Serve warm or at room temperature
Notes
Don’t buy Italian pork sausage for the recipe! Trust me, it will taste weird. If you can only find Italian sausage, just use plain ground pork instead.
