Beef & Broccoli

Recently I realized, after 275 posts, that I have posted zero recipes that include rice. I think I’ve mentioned it before in posts, i.e. “this would be great served with rice!”, but I’ve never actually made something with it. Pasta has been holding us hostage and there’s just been no room for anything else. I felt like that needed to be fixed. It bothered me.

The answer was easy – beef & broccoli, but I was a little worried. Beef & Broccoli is one of those dishes I always order when I get take-out, but haven’t tried making at home. I always thought it would be too difficult to recreate, that the flavor would somehow be off and not as satisfying as what I get in a restaurant. As usual, I was wrong.

I did some research and learned some things. First, it’s important to marinate the beef. If you have a real time crunch you could skip this, but try to plan so that the beef can marinate for at least 10-15 minutes – giving it a soak will allow it absorb all the flavors, otherwise it might not be as flavorful. Keep in mind that the beef doesn’t cook for that long in the sauce, so the marinade part is sort of important. Second, blanch the broccoli. Please. It will turn a wonderful bright green that will make you happy.

Once you’ve marinated the beef and blanched the broccoli you’re almost done. Just cook the beef in a hot pan for  a few minutes, toss in the broccoli, and pour in the sauce. Give it a good stir and let it all cook just until the sauce starts to thicken. Ta-da! Beef & Broccoli!

Served with – are you ready for it? – rice. It’s a first.

Beef & Broccoli

Better than take-out beef & broccoli!
Cuisine: Main Course

Ingredients
  • 1 tablespoon vegetable oil
  • 1 pound beef tenderloin, cut into strips
  • 3-4 cups broccoli florets
  • For the Marinade
  • ]2 tablespoons soy sauce
  • 2 teaspoons rice wine vinegar
  • 1 teaspoon toasted sesame oil
  • ¼ teaspoon ground black pepper
  • 1 tablespoon cornstarch
  • For the Sauce
  • ⅔ cup soy sauce
  • 2 tablespoon brown sugar, packed
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon corn starch
  • 1 teaspoon siracha
  • 1 teaspoon ground ginger
