Orange/Peach (No-bake) Cheesecake in Glass plus Giveaway

It is just the beginning of the Year 2015 and the upcoming Chinese Lunar Year is due on Feb 19. You have slightly more than 4 weeks getting busy in the your kitchen preparing goodies for the festive season.
I’m honored to receive SunMoon DC comics fruit cups from SunMoon Direct just before the Christmas holiday. Besides enjoying these fruit chunks in 100% apple juice, as a healthy snack, I also made them into a dessert with mandarin oranges and peaches, Cheesecake in Glass. You can prepare this simple dessert 2-3 days ahead, chilled and serve at anytime of the day especially during the CNY holidays.
Orange/Peach (No-Bake) Cheesecake in Glass

      Ingredients:
      250g Cream cheese, room temperature
      4 tbsp Icing sugar
      2 tbsp Lemon juice
      1/2 tsp Vanilla extract
      1 tbsp Gelatin powder
      2 tbsp Water
      250g Non-diary topping cream (whip topping cream)

      Topping
      2 cups Sun Moon Orange Apple juice, drain & reserve juice
      2 cups Sun Moon Peach Apple juice, drain & reserve juice
      Reserved juice (about 240ml) + water (about 60ml) add up to 300ml + 1 tbsp sugar + 2tsp gelatin

      Method:

  • Soak gelatin powder with 2 tablespoon water for one minute and them melt in a double boiler, set aside. Prepare 10 – 12 small glasses.
  • Beat cream cheese and icing sugar together till smooth at medium speed. Add lemon juice, vanilla extract and melted gelatin, mix well and transfer to a large bowl.
  • Whisk topping cream to peak form and mix into cream cheese, mix well. Spoon mixture piping bag and pipe into individual glasses to 3/4 full and chill for few hours to set.
  • Topping – In a pot pour in reserved apple juice and water, 1 tablespoon sugar and 2 teaspoon gelatin. Stir apple juice mixture at medium heat till boiled and gelatin dissolved.  Set aside to cool.
  • Place mandarin oranges/peaches on top of cheesecake (shown in picture). Gently add about 2-3 tablespoons apple juice on top of cheesecake.
  • Refrigerate to set for several hours before serving.

橘子/水蜜桃(免考)芝士杯子蛋糕

      材料:
      250克 芝士奶油,温室
      4汤匙 糖粉
      2汤匙 柠檬汁
      1/2茶匙 香草精
      1汤匙 鱼胶粉
      2汤匙 水
      250克 植物性奶油
      上层
      2杯 SunMoon橘子,保留苹果汁
      2杯 SunMoon水蜜桃,保留苹果汁
      苹果汁(约240毫升)+ 清水(约60毫升)= 300毫升 + 1汤匙细糖 + 2茶匙鱼胶粉

      做法:

  • 用两汤匙水浸泡鱼胶粉1分钟,然后隔水融化,备用。准备10-12 小杯子。
  • 用中速度搅打芝士奶油和糖粉至顺滑。加入柠檬汁,香草精和融化鱼胶粉,混合均匀后放入一个大碗里。
  • 将植物性奶油打至7分发状态,拌入芝士糊里搅拌均匀,用小圆孔的裱花嘴挤入小杯子中至3/4满,放入冰箱冷藏数小时至凝固。
  • 上层 – 将苹果汁加清水,糖和鱼胶粉全部加入锅子里,用中火搅至水煮滚及鱼胶粉融化,熄火待凉。
  • 将橘子/水蜜桃铺在芝士蛋糕上 (看图)。然后轻轻倒入2-3汤匙苹果汁。
  • 放入冰箱冷藏数小时至凝固即可享用。
