Chive Egg Cakes

These delicious savory chive egg cakes are pretty quick to make as I didn’t make the dough skin to wrap the cakes like what’s done traditionally (you may like to check my Chinese Chive Pockets recipe here) .  Instead of frying them, I pour the chive egg mixtures into cupcake liners and bring them to bake in the oven for about 20 minutes, anyway you can pan fry it like pancakes with some oil if you preferred.  These chive egg cakes are perfect to serve warm or as finger food. You can even keep the remaining cakes in the chiller, then toast them for a few minutes for morning breakfast.

Ingredients
  • 100g ground pork
  • 50g prawn, cubed
  • 150g Chinese chive, remove hard end and chop
  • 3 large eggs
  • 250ml milk

    Seasoning

  • ½ tsp chicken powder
  • ¼ tsp sugar
  • ½ tsp salt
  • ½ tsp light soya sauce
  • ¼ tsp sesame oil
  • dash of pepper
Instructions
  1. Combine ground pork and prawn meat together. Add seasoning and mix well followed by chives. Stir well and chill in refrigerator for 15 minutes..
  2. In another bowl, lightly beaten eggs and combine with milk, blend well. Pour in chive mixtures and lightly stir well.
  3. Scoop mixtures into muffin pan lined with cupcake liners and bake in preheated oven at 180 deg C for about 35 mins.

韭菜蛋饼

  • 快速简单好吃的韭菜蛋饼,不想烘烤的话也可以直接把它放在热锅里加入少许油煎香。


材料:可做9个

  • 100克 肉碎(绞肉)
  • 50克 虾肉,切粒
  • 150克 韭菜,切小段
  • 3个 大鸡蛋
  • 250毫升 鲜奶

调味料

  • 1/2茶匙 鸡精粉
  • 1/4茶匙 细糖
  • 1/2茶匙 盐
  • 1/2茶匙 酱请
  • 1/4茶匙 麻油
  • 胡椒粉 适量

做法:

  1. 将肉碎,虾肉和调味料混合在一起,拌入韭菜混合。然后放入冰箱冷藏15分钟。
  2. 在另一个碗打撒鸡蛋,然后和牛奶混合均匀。倒入韭菜混合物再拌匀即可。
  3. 然后平均分配韭菜混合物到纸杯里。送人预热烤箱摄氏180度烤约35分钟或直至熟透即可享用。
