Chocolate Salami

What the heck is he making now? Yeah…chocolate salami. This after dinner treat or dessert is like the better known “mosaico” or “kormo”.

Basically it’s chocolate, sweetener and broken biscuits. One could add nuts or dried fruit in the mix too!

This is an easy and delicious treat and I like it with Santorini Vinsanto after a meal.

Chocolate Salami

(makes 1 salami/14 pieces)

2 cups chopped dark chocolate (70%)

1 (14oz) can of sweetened condensed milk

3 cups of broken petit beurre style cookies

1 1/2 tsp. vanilla extract

1. Empty chocolate and condensed milk into a metal bowl and place over a pot of simmering water.
2. Stir until melted and no more lumps appear, take off the heat.
3. Add the vanilla and cookies and fold in with a rubber spatula.
4. Let stand for 15 minutes to firm up.
5. Roll out a sheet of parchment paper and empty your chocolate mix on it. Shape into a 12 inch log and wrap with parchment and place in the fridge overnight.
6. The next day, roll in icing/powdered sugar before serving (I even tied it with butcher’s twine for a real salami look).
7. Slice and serve with a fortified wine, like a Santorini Vin Santo.
