Pressure Cooker Enchiladas Verdes {Green Chile Enchiladas}

Pressure cookers have come a long way in the last decade. If you thought you could only cook beans, rice or pot roast in a pressure cooker, think again. Everything from boiled eggs, cheesecake and even enchiladas can be made entirely in a pressure cooker!

I spent my day today at a new job. After 20 years in the same profession it’s hard to stick your foot in a new door. Sometimes however, change is a very good thing, detrimental even to your well being and happiness however hard it may be to be the new kid on the block. 
I’ve learned to listen to that nagging feeling I sometimes have deep down inside that tells me to seek opportunity elsewhere, to actively do something about situations that I have control over and to acknowledge the fact that sometimes the grass actually is greener on the other side of the hill. Life is just too short to be miserable or even unsatisfied. 
This, apparently is what happens when you turn 40. Mid Life crisis or epiphany?

So after 13 years working in trauma centers and 7 years at a somewhat smaller and much less financially gratifying hospital I’ve snuggled my way into a  per diam outpatient surgery center job. It’s a culture shock to say the least. So far everyone seems……. happy, content, pleasant.

Arriving at my front door just in time for my new found, simpler, happier life was this Electric, Power Pressure Cooker XL …….. aka, “The Insta Pot” BomBomBoommmmm!!!!

Hellooooooo Easy Living!
My husband walked in the door from work, took one look at my new kitchen toy and said
  “Hey, even I could work this thing!”


It’s actually pretty impressive. You plug it in, push one of the many pre-set options depending on what you’re making and walk away. I was moved from impressed to stunned with the “adjust as you please” button. After all, Enchiladas Verdes was not a pre-set option. The included mini cookbook however did include a lasagna recipe which suggested starting with the “soup” option and adjusting accordingly and worked like a charm with these enchiladas.

Another feature I really loved was that when the pre-set timer was done this thing actually turned itself into “Warm Mode”!  I’m sorry, you mean I don’t have to run down stairs and shut it off before it explodes?

Bonus.

I made these enchiladas vegetarian with some of our favorite in season vegetables. 
Feel free to add cooked chicken if you please. 

TIME          30 MINUTES   (with home made tortillas)            SERVES          6

YOU WILL NEED

1 recipe for home made corn tortillas (If you have an extra 10 minutes I implore you to sub these for the cardboard flavored store bought variety!)

2 large zucchini, chopped

2 cups crimini mushrooms, chopped

1 poblano pepper roasted and chopped (or 1 small can roasted green chilies)

1- 28 oz can green chile enchilada sauce

3 cups colby jack cheese, shredded

1 large yellow onion

1 teaspoon cumin powder 

1/2 teaspoon salt

Garnish

sliced avocado
sliced green onion
cilantro, chopped
sour cream
beans

PUTTING IT ALL TOGETHER

Saute onion and mushroom in a cast iron skillet till browned. Remove from heat and set aside. Add chopped zucchini to skillet and sprinkle with cumin and salt. Cook 3-5 minutes until browned.  In the bottom of the inner pot from the pressure cooker, pour 1 cup enchilada sauce. Place 4 corn tortillas evenly on top of sauce. Spoon the onion mix and zucchini then cheese. Layer more tortillas, sauce and vegetables. Top with remaining tortillas, sauce and cheese.

Place lid on pressure cooker and turn to locked position. Push “Soup” button and add 5 minutes by pushing “adjust time” button. Remember to turn top steam release button to locked (as per included instructions recommend).

When the timer goes off either turn pressure dial to “release steam” or leave it alone and it will automatically switch to “keep warm” function until you are ready to eat.
