Ask The Local Cook: What Should I Serve for Easter?

I love holiday dinners with my extended family because we do it potluck-style. Without fail, on Easter we will have ham,cheesey potatoes, seven layer salad, deviled eggs, and lime pie along with whatever else we feel like making that year. Depending on who is coming, the standards are divvied out and then it’s up to the adventurous cooks to fill in the gaps.

This year I’ve been asked to bring a dessert, and I think I’ll come up with something that makes use of the frozen cherries or blueberries that are in my freezer from last summer. Not sure yet. That’s the other good thing about handling large dinners potluck-style–no need to worry, since its only one or two dishes you are responsible for you can get as creative or as last-minute as you want.

Last year I made carrot cake with cream cheese frosting (despite sinking, it DID taste better than the Costco version that my mom requested, I swear!)
