Slow Cooker Enchiladas
This is quite a versatile recipe; you can make it in a slow cooker, or bake it, or microwave it if you really want to. It’s a great way to sneak in more vegetables.

1. Cook ground beef, onions, and green pepper together in a large skillet until the beef is cooked through and the vegetables are tender. Drain.
2. Add beans, water, spices, summer squash, and corn and bring to a boil; reduce heat; cover; simmer for 10 minutes.
3. Combine the cheeses in a separate bowl.
4. If using the slow cooker option, layer together 1 C of the meat-bean mixture; one tortilla and 1/3 C cheese; repeat layers to use all the ingredients. Cook on low for 5-7 hours. OR, layer in a baking dish and bake in a 350F oven for about half an hour, or until heated through.

The Verdict: I had considered making homemade salsa to go with this, but decided against it since it already had tomatoes in it. Too bad, it would have made a great addition. I served it with sour cream instead. When I told DH we were having enchiladas, he said “aren’t enchiladas rolled up, with sauce?” Yes, they are, and we have some great Mexican restaurants in our area that would probably not call this dish “enchiladas.” However, it was a great comforting, cheesy, flavorful dinner. The tortillas are what really drove up the calorie count, so I’m thinking you could decrease the amount by half and still get the concept that they were going for. It would also be worthwhile to try to find a chili sauce recipe that you could use as a topper.
