Your next installment of “Blast from the Past” includes my almost famous (ZC) Moussaka Recipe. While it is not exactly Zero Carb, it is within the limits of what we are allowed to eat here. The whole recipe is about 18ish carbs from the dairy products used according to “ND nutrition facts” you may come up with something different. It yields nine servings for about 2 carbs a serving.

Original Stardate: 7/11/2010 
I have to say that the Moussaka came out pretty good IMO. I use to make this LC. I simply removed all the LC items (veggies) and it came out better than before. DW did not care for the LC version, but really like my (ZC) version. The following are the pics then the recipe:



(ZC) Moussaka

Ingredients

4 Oopsie Rolls
1/2 tsp. salt
1/4 tsp. black pepper
1/2 T. garlic powder (or 1 T minced garlic)
2 lb. ground chuck (80/20)
1 tsp. dried oregano
1 tsp. ground cumin
1 T butter (glass 8×8 glass baking dish)
1 cup whole milk ricotta cheese
1 cup heavy Whipping cream
1/2 tsp. paprika
2 eggs
1/3 cup grated Parmesan cheese

Directions
Preheat oven to 375 degrees F.

Ground Beef mixture
In a large skillet, Add ground beef, oregano, cumin, garlic, salt and pepper. Brown evenly.

Topping
In a medium mixing bowl, combine ricotta cheese, heavy whipping cream, salt and paprika. Add eggs and blend together.

In a buttered glass 8 X 8 baking dish, layer Oopsie Rolls on bottom (they will overlap), then ground beef. Pour ricotta cheese mixture over layered ingredients. Sprinkle with grated Parmesan cheese. Place Moussaka in the oven and bake for 40 minutes. Let stand for 10 minutes. Cut into 6 servings and serve warm.

I ate it with a nice lamb shoulder chop (medium). The Oopsie Rolls really helped to keep the bottom in place. This was my first time making the (ZC) version and I was pleased.

Sharon F, I hope you get a chance to try it. I also think I got my pic size is under control. The first time I posted pics they were too big. Then I adjusted them and they looked too small. I think these are just right. I guess this recipe could be posted under “Meat”, “Cheese” or “Oopsie Rolls”.

I hope that anyone who tries it will enjoy it as much as I did. Opa!!!!

I still get “tummy troubles” almost every day (nothing chronic), but I don’t let it get me down. I just chalk it up as part of the process. One day the rumbles will tumble and my “tummy troubles” will fumble.

I got to sleep in today and I feel recharged. I had steak and eggs this morning for a little change. I am almost out of beef, so I plan to do some shopping today. Tomorrow I will make Lamb Chops and my version of (ZC) Moussaka (Chreiázomai mia ev̱logía). I plan to buy some GB and steaks if I can find some on sale or “mark downs”. I hope everyone has a great (ZC) day.

Observation:

I see in my second post I talked about making the (ZC) Moussaka on the next day, but according to my archive I made it the same day. I have a couple of posts for the next day that don’t include making the recipe. So I must have made it later in the day. I know for sure that I post the next day about eating the recipe, but I will just leave it as is. In retrospect I probably should have held off making it while trying to lose weight. Ahh the tummy troubles….well it looks like they are still there. I still want to attribute them to the removal of my gallbladder. Jeez and my weak attempt to rhyme or was that rap?? Hahaha!!! I tried to keep positive and strong during the “break-in period” and I prevailed.
