(2/2011) Cookbook Review: Pretty Delicious By Candice Kumai

% of readers think this story is Fact. Add your two cents.

Pretty Delicious by Candice Kumai (Rodale/2011) is a lovely book with a beautiful cover.  The photo makes you feel like opening it up and indulging.  The author, Candice Kumai is a Le Cordon Bleu California School of Culinary Arts trained chef.  She has appeared on Top Chef (Bravo) and was the host of Cook Yourself Thin (Lifetime).

Kumai insists that being skinny as a result of eating well is completely affordable.  This is good news–considering that the author resides in New York City, where city prices are in.  “Tricks of the Trade” include shopping seasonally, using generic products, and cooking at home.  She even advocates preparing your own homemade barbecue sauces, salad dressings, and marinades for cost cutting effectiveness.  I must add that I agree.  For years, this is what I myself have done.  They are fresher and preservative free.

The author’s “Three Rules to Cook By” are basics:

1. You are what you eat–(Eat foods with nutritional benefits.)

2. Think outside the box–(Most packaged foods are junk food.)

3. Cookin’ it old school–(Grandma cooked her own food.)

Using innovative recipe ideas, based upon Kumai’s eclectic heritage (Japanese, Polish) tied with her cooking background, she presents recipes to entice.  Kumai emphasizes her own love of fruits and vegetables, packing the recipes with nutritional punch.

Favorites of the reviewer:

Roasted Artichokes With No Mayo Aioli

Miso Gorgeous Glazed Salmon

Fresh Fuji Crab Cakes

Pretty Delicious is a healthy smart-eating cookbook for those creative cooks who are nutritionally conscious and utilize fresh ingredients.  There are lots of veggie features, seafood, beverage and dessert recipes.  The book is elegantly enhanced with the photographic finesse of Quentin Bacon. (See his work on his site–it’s absolutely fabulous!)
