Celebrity Chef George Stella Creates Tasty, Low-Carb Recipes

ORLANDO, Fla. (Oct. 4, 2012) – Greater Orlando Medical Weight Loss (G.O.), one of Central Florida’s leading weight loss clinics, recently entered into a collaborative agreement with celebrity chef George Stella.  Stella, who lives in Kissimmee, is best known for his appearances on The Dr. Oz Show and The Food Network, and is the author of five top-selling “low-carb” cookbooks.

As part of their collaboration, Chef Stella is creating tasty, low-carb recipes specifically for G.O. patients.  The first recipe provided was for Raspberry Drop Scones, which Stella demonstrated live last month on WOFL’s “Good Day Orlando” TV program.  The delicious and healthy recipe follows:

Raspberry Drop Scones 
Calories:125 | Fat:9.5g | Protein:5.5g | Fiber:2.5g | Net Carbs:3g

Prep Time: 5 min / Cook Time:15 min /Serves: 6 

Shopping List: 
2 large eggs, beaten until frothy 
1 cup almond flour 
1/3 cup bulk sugar substitute (recommended: Splenda®) 
1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla extract 
1/2 cup fresh raspberries   

1. Preheat the oven to 375°F and line a sheet pan with parchment paper. 
2. In a large bowl, combine all of the ingredients, except for the raspberries, and mix well to create a thick pancake-like batter. (If too thin, add more almond flour) 
3. Gently fold the raspberries into the batter and use a tablespoon to drop 6 evenly spaced scones on the lined pan (about 2 heaping tablespoons for each scone).   
4. Bake for about 15 minutes, until scones begin to lightly brown. Let cool for 10 minutes before removing from the parchment paper and serving warm. 
 

Almond Flour 
Calories: 140| Fat: 12g|Protein: 5g| Fiber: 3g| Carbs: 2g 

Shopping List: 
10 ounces sliced raw almonds (may use whole raw almonds)

1. Grind the almonds on high in a food processor for about three minutes, until they’ve reached a grainy, flour-like consistency.   
2. Almond flour can be stored in an airtight container for up to one week on the counter or for several months in the freezer.
