Pictured above is a 30 OZ container of Coconut oil. It contains over 7000 life sustaining calories for about $7. Gram for gram fats have over twice as many calories as proteins or carbohydrates. Since September is upon us, if you are doing any last minute prepping, you may want to add coconut oil to your shopping list. Why coconut oil. Coconut oil has a very long shelf life, typically at least a year. Eatbydate.com believes that the typical “eat by dates” on coconut oil products are conservative:

There are some products that may rival the shelf life of coconut oil such as shortening (typically containing at least one hydrogenated oil), Lard (hydrogenated or partially hydrogenated pig fat), and Ghee (too expensive for me). Note the “best buy” date on one of the containers I bought a couple of months ago. I have 17 months left until the product will not be “best”.
Coconut oil is suitable for cooking up to 350 degrees Fahrenheit. It is fairly inexpensive if you shop around. Also I have read that it replaces butter, shortening and liquid oils in your favorite recipes.

This was the results of 1/3 cup of popping corn and two tablespoons of coconut oil. Try it with a little parmesan cheese.

Most of the time, fats go bad by going rancid; oxygenation causes this. Would the shelf life be increased if the fat was canned in Mason jars (or eq)? The oil would be hermetically sealed in an oxygen-proof, non-reactive container.
I think it’s mostly saturated fat so it should already be fairly resistant to going rancid, or at least more resistant than unsaturated fats. Of course keeping it cool or maybe even frozen and away from light would help. In an emergency yes it could be a lifesaver, plus it seems to work well on dry skin. I don’t personally consume it regularly because it is extremely yin.
