      I’m writing from Michigan, where myself and much of my family is of Finnish ancestry, and they worked in the iron and copper mines in the upper peninsula in the early 1900′s. My grandmother was full blooded Finn and I have very fond memories of her cooking up some major Finnish dishes when I was young. The kitchen always smelled so good. During the depression, she would save up her bacon grease in a coffee can and mail the cans back to the old country so her family there at least had something to eat. From what I understand, they had it much worse in Finland than we had it here during those days. Some bacon grease wiped on a piece of bread must have saved them from starvation at some point.
      A normal day for those in my family would consist of getting up before dawn and baking Finnish pasties, wrapping a towel around them, put them in a box for the men to take down in the mines. By the time lunch came around, they would unwrap the pasties and it would be still warm for them to eat.
      Grandma has been gone now for more than 50 years, so it is nice to see someone posting blogs about Finland and the food there. Other than a cousin who moved there and married a Finnish girl, I haven’t had any contact with the Old Country in decades.
