During boiling, a phenomenon called the “hot break” occurs. This is the separation of proteins and other solids from the wort, creating a clearer liquid. After boiling, the brewer initiates the “cold break” by rapidly cooling the wort to room temperature or slightly lower. This further clarifies the wort and helps prevent haze in the final beer.

 

Hop Utilization

The brew kettle is where hops undergo isomerization, a chemical process that transforms hop alpha acids into bittering compounds. This bitterness balances the sweetness of the malt in the final beer. Additionally, late hop additions in the brew kettle contribute more aroma and flavor without excessive bitterness.
