Reeces Pieces Drop Cookies {No Bake}

Well, as most of you know, I’ve moved to Houston…but still no house! We’re staying in our RV at a really nice RV resort. While the amenities are great and I’m thankful we have this RV to get us through this time between houses, I have to say that at times it can get a little claustrophobic with the tight quarters. Cooking and photography have become challenging to say the least!

But we’re hangin’ in there.

Before leaving to be with our family in Austin, my kids were wanting something sweet, but since temperatures are still high here in Texas, I didn’t want to heat up the RV by turning on the oven, so I decided to make a no bake cookie. This is a twist on the original Special K no bake cookies, but I’ve add a few ingredients, including butter and Reeces Pieces candy.

My family LOVED them and are already asking that I make more. And because of the Reeces Pieces, they want me to rename them E.T. Cookies because of Elliot coaxing E.T. out of the woods by leaving a trail of Reeces Pieces candies on the ground.

REECES PIECES DROP COOKIES {NO BAKE}

1 cup white sugar

1 ½ cups creamy peanut butter

1 cup clear corn syrup

4 tablespoons butter

½ teaspoon salt

1 teaspoon vanilla extract

4 cups Special K original cereal

1 cup Reeces Pieces candies

Combine syrup, sugar, butter, and salt in a heavy-bottomed medium sauce pan and bring to a boil over medium-high heat. Boil for 1 minute and remove from heat. Stir in vanilla, mixing well, and then fold in cereal. Gently stir to thoroughly coat cereal. Gently fold in candies and mix until combined.

Drop by tablespoonfuls onto waxed paper or foil. Allow to cool completely and store in an airtight container.
