I am so, so excited!  We are scheduled to close on our new house this Friday, December 9th…and I can’t wait!  We’ve been in our RV for almost 3 months and it’s taken a toll on my cooking flexibility.  I can’t wait to get in my new kitchen and get busy doing what I love most…cooking & baking!

This is another keeper that I pinned on Pinterest a while back and it’s wonderful!  It is a slow cooker or Crockpot recipe, so it’s perfect for a busy day.  My family loved it and I’ll definitely be making it again.

Brown Sugar Balsamic Glazed Pork Loin

Recipe adapted from Let’s Dish

Ingredients

  • 1 (2 pound) boneless pork loin
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 clove garlic, crushed
  • ¼ cup water
  • ¼ cup Worcestershire sauce
  • Glaze:
  • ½ cup brown sugar
  • 1 tablespoon cornstarch
  • ¼ cup balsamic vinegar
  • ½ cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon Hoisin sauce

Instructions

  1. For Roast: Combine rosemary, salt, pepper and garlic. Rub over roast. Place in slow cooker with water and Worcestershire sauce. Cover and cook on low for 6-8 hours.
  2. For Glaze: About 1 hour before roast is done, combine ingredients for glaze in small sauce pan. Heat and stir until mixture thickens to the consistency of syrup. Brush roast with glaze 2 or 3 times during the last hour of cooking. Serve with remaining glaze on the side.
