Lunchbox Pizzazz – Pizza Rolls
If you’ve ever worked in a restaurant, you know that while there is a guide for creating every meal the menu offers, each cook on the line doesn’t necessarily measure ingredients. When you are talking about butter or other fatty aspects of preparation, an ounce one way or the other adjusts the total calories and fats immensely. Packing a lunch is a healthy, inexpensive way to combat the unknown with restaurants and other grab-and-go type places. Today, we’ll satisfy the desire to enjoy pizza without the grease.
Ingredients:
- 1 tortilla (8 inches)
- 2 tablespoons pizza sauce
- 3 tablespoons mozzarella cheese
- Baby Spinach (around 15 leaves)
Spread the pizza sauce evenly on the tortilla. Arrange the spinach to cover the tortilla. Sprinkle cheese atop. Microwave for 30 seconds and roll up. Allow the cheese to cool slightly before slicing. If microwaves aren’t your thing, add a pan of water into an oven set at 400 degrees and allow steam to build. Place the tortilla in the oven for 1-2 minutes to warm without becoming crisp. Pull it out and roll it up.
These can be made a day ahead and left in the refrigerator. The toppings here are just a suggestion. I love pizza rolls with olives, onions, and peppers, too!
Pair with a spinach salad and vinaigrette dressing for a filling, healthy delight for adults or add in some fruit slices for children.
