Gluten Free & Dairy Free “POWER” Cookies

Ingredients

2 cups rolled oats

1 cup brown rice flour

1 cup quinoa flour

1 cup coconut sugar (or other)

3/4 cup unsweetened almond milk

1/2 cupextra virgin olive oil

1/2 cup amaranth/tapioca flour

1/2 cupchocolate chunks

1/2 cupcarob chips

1/2 cuppumpkin seeds

1/2 cupsunflower seeds

1/2 cupshredded coconut

1/2 cupprotein powder

2-3 tsp cinnamon

1-2 tsp sea salt

Directions

A. Preheat oven to 350 degrees F

B. Put everything into a bowl and mix thoroughly

C. Grease a baking sheet

D.Form dough into whatever size balls of cookies you want

E. Press dough balls gently onto pan

F. Bake for 20 minutes, cook, and eat!!!

I made these cookies after being ~~deprived~~ inspired by these cookies from Whole Foods

…and because they give me so much energy I feel like the ~~Man~~ Woman of Steel!!!

The recipe technically yields about 12 cookies, but I just made 6 big ones instead

I also had one for breakfast, and my gosh they were good
