CHOCOLATE SHEET CAKE from Paula Deen and Alan Jackson

I’ve been looking at this recipe for sometime.  The magazine page is dated May/June 2010!!! About time I made this cake and see if its to my likings…Yup Another chocolate cake…………..it’s easy, moist, and fast to put together. Delight in a 9×13 inch pan, moist chocolate cake with a fudgy icing on top….The icing is poured over the top of the hot cake right from the oven………doesn’t get much easier then that!!! So here is the recipe:

2 cups flour
2 cups sugar
1/2 tsp salt
1/2 cup butter  (1 stick)
1/2 cup vegetable oil
4 TBSP unsweetened cocoa powder
1 cup water
1/2 cup buttermilk
1 tsp baking soda
1 tsp white vinegar
1 tsp vanilla extract
2 large eggs

In a medium bowl add the flour, sugar and whisk this together and set aside.
In a large saucepan add the butter, oil, cocoa, and the water.  Whisk this until blended.  Bring just to a boil over medium heat and stir constantly until the butter melts and the mixture is smooth. Pour this over the flour mixture and mix with your mixer.  Then in another bowl mix the buttermilk, baking soda, vinegar, vanilla and the eggs and mix then add this to the chocolate mixture.

Prepare your 9×13 inch baking pan with grease and flour.  Pour the cake batter into the pan and bake for about 30 minutes at 350 degrees.   Or bake until a toothpick inserted in center comes clean. 

While the cake is baking make the icing:

1/2 cup butter (1 stick)
4 TBSP of unsweetened cocoa powder
6 TBSP of milk
1 (16 ounce) package of confectioners’s sugar
1 tsp vanilla

Using that same large saucepan add the butter, cocoa and the milk and bring to almost a boil over medium heat.  Remove from the heat and add the vanilla and the confectioner’s sugar.  Mix with mixer.  
When the cake is done poke holes in the top of the cake using  a fork or ice pick.  I used a wooden skewer and made several pokes in the top of the cake.   Pour the icing over the top of the hot cake. Sprinkle with sprinkles or chopped nuts if wanted.   Serve this cake from the pan……Enjoy
