I’m still working on the last recap of our England/Italy trip and it’s been a real challenge picking the Florence photos. So many good pictures and so much to share! My goal is not to spam everyone who visits with bunch of photos so I’m doing my best to just pick my most favorite shots. Photo-picking was also briefly interrupted by our quick trip to Cancun, Mexico over the 4th of July holiday. It was four days of sun, sand, drinks and relaxation — more on that in a later post.
In the meantime, I thought I’d take a trip recap break and share a recent breakfast creation featuring some wonderful peaches that our nice neighbors shared with us. There’s nothing better than fresh-picked fruit delivered to your doorstep – such a neighborly thing to do.
Most of the peaches disappeared fairly fast after just slicing them up and snacking on them through out the day — the only thing we needed was a napkin close by to help catch the dribbling juice.
However, I did save a couple to make some peaches & cream oatmeal inspired by this pin I found on Pinterest a few months ago. It’s pretty health-conscious thanks to the Greek yogurt filling in as the “cream” with just a drizzle of honey. I also added a sprinkling of granola over the top to add some crunch. Looks like a bowl of sunshine…
So, now it’s back to photo sorting and finishing our trip recap – hopefully will have it posted this weekend!
