Despite growing up in the UK I have fond memories of observing Ramadan over the winter months. We mostly had traditional meals (a blend of East African and Indian), although my mum would make many more appetizers and small bites for iftar. About six years ago we moved to Dubai, but our Ramadan iftars haven’t changed much – I have been married a couple of years now, but I am lucky in that I live barely five minutes away from my parents house. This means my iftar’s are still mostly eaten together, except I am a lot more helpful than I was in my younger years! Regardless of what we eat, we always make sure there is room for something sweet to be enjoyed later in the evening.

Infact as my blog is mostly dedicated to baking and sweet things it only made sense for me to share a dessert recipe. Though I have been making no-bake cheesecake pots for a while (I have a few recipes on my blog), this recipe for exotic fruit cheesecake is a pretty new addition to our Ramadan, as I first made it a couple of years ago. It was one of those desserts which everyone loved at first taste and something which I have been looking forward to being able to make every Ramadan since.  

Made up of three layers – a biscuit base, a light cream cheese, and a fruit layer consisting of kiwi, pineapple, and mango, its quick to put together and is best eaten on the day. Its light, refreshing and not too sweet, which makes it the perfect dessert choice during the holy month. What makes no-bake cheesecake pots so good is the endless options of fruit you can use to swap out the main layer (if you are using more sour fruits though such as berries, its best to cook them into a sugar syrup). Its also best to always use fresh fruit! The combination of different layers makes the basis of this recipe one which I enjoy making time and time again. The fruits in this recipe taste sublime together, the biscuit crumb provides the right amount of crunch, and the coolness of the mascarpone layer is welcoming. Altogether the different layers, tastes and textures perfectly compliment each other. 

Its great for when you are expecting guests over after iftar at the last minute, and looks lovely when served after an iftar meal too. Serve it in little dessert glasses, but be sure to make extra for those who want seconds!

Exotic Fruit Cheesecake Pots (No-Bake)
Fills 4 glasses, or 8 mini glasses


INGREDIENTS: 
  • 150 gms. of fruit – mango, kiwi & pineapple, very finely chopped
  • 6-8 digestive biscuits, or any plain biscuit brand
  • 2 tbsp. Butter, melted
  • 250 gms. tub of mascarpone
  • 4 tbsp. heavy or single cream (can be omitted if preferred)
  • 4 tbsp. icing sugar
  • 1 lemon, zested and juiced
PREPARATION:
  • Prepare and chop the fruit. 
  • In a processor, whizz the biscuits together with the melted butter, until crumbly. 
  • Line the bottom of your glasses with a layer of biscuit mixture and chill in the fridge for ten minutes.
  • Meanwhile mix together the mascarpone, cream, icing sugar, lemon zest and juice in a bowl.
  • Add a layer of the mascarpone cheese to glasses, then add the fruit. Repeat layers with the biscuit, so that the fruit forms the top most layer.
  • Chill until ready to serve.
