We are stopping by at Bangalore today…..where Razina of RaaaZzzfoodlove is waiting for us with piping hot iftaar snack…I already told you snacks play very vital role during Iftaar time….My mom makes a different snack everyday during iftaar time…and sometimes I too plan to do a different snack everyday during Iftaar time but hardly find time to make anything more than soup or fruit salad or pakoda’s or bhaji’s….When you are a working mom and get less time to prepare anything scrumptious for Iftaar, then try these bread rolls….from Razina. First of all a warm greeting of Ramadan to all the readers of this page. I am thrilled to be a part of this series which actually was a window for me in to the world of food blogging. When I had started my blog last year, I was not aware of the existence of a large number of food blogs. It was during Ramadan that I bumped into Lubna’s page and was introduced to so many bloggers which actually opened up my eyes. Thank you so much dear for hosting such a great event!!!! May you have many more successful years to come….

Ok, now a bit about me, I’m Razina who blogs at RaaaZzzfoodlove. Major portion of my life has been spent in UAE and now live in Bangalore – India with my family. In UAE, come Ramadan and the whole atmosphere gets charged up. There is spirit of holiness and lots of giving and sharing takes place during the entire month. Iftaars are arranged in mosques as well as special tents will be put up everywhere. Prayers and charities will be at its max. We used to send iftaar delicacies to our neighbors everyday and they sent back their goodies. As a  result our table used to be full of different varieties of food. In Bangalore, the atmosphere is not the same, may be because I’m not put up in such a locality. Here I prepare the entire iftar myself and food is exchanged only during weekends. But I do make a point to visit Mosque Road in Frazer Town at least once, to enjoy the street food fair that is organised during this month. Its a place where you will get to taste a whole lot of yummy food which is not available anywhere else. 

Coming to the recipe that I would like to offer to the readers is Potato stuffed Bread Rolls which my mom used to make for iftaar along with all other delicacies. As we do crave for all the fried stuff, this recipe is one of the best item to have in your menu…

INGREDIENTS:

  • Bread – 4 slices, edges trimmed
  • Potatoes – 2 medium sized, boiled, peeled and mashed
  • Peas – 1/4 cup, boiled
  • Cumin Seeds – 1/4 tsp
  • Green chili – 1, finely chopped and crushed lightly
  • Salt – to taste
  • Coriander leaves – 1 tbsp, chopped
  • Amchur/Dry Mango Powder – 1/4 tsp (optional)  
  • Oil – for deep frying
PREPARATION:
  • In a bowl, mix all the ingredients except the bread
  • Dip the bread slice in water very lightly and press it with hands to remove all water
  • Put a tbsp of the filling in the center and cover it completely with the bread making it into oval shape
  • Leave it to rest for around 5-10 minutes
  • In a kadhai, heat oil and fry the rolls till they become golden brown colour on all the sides
  • Serve hot with ketchup or any chutney of your choice!!!
