Meatball Sandwich
When I make meatball sandwiches I make sure they are are stuffed full of tender meatballs, dripping in sauce and topped with melty cheese. In other words, I like ‘em messy. What you see pictured above is best eaten with a knife and fork – seriously, don’t even try to pick it up and eat it like a normal sandwich unless you like your shirt splattered with tomato sauce. Trust me, a knife and fork is the best way to go.
Normally I make meatball sandwiches with ground beef, but this time I switched things up and used ground lamb with some Parmesan cheese, fresh herbs, minced onion and some garlic powder. The meatballs are first browned in a hot pan then finished off in the sauce. Oh, and have you seen those take and bake baguettes at the grocery store? One baguette is the perfect size for two meatball sandwiches – just bake it off, cut out some of the middle, then toast it quickly under the broiler. Pile the meatballs in and top with sauce and mozzarella cheese. Slice it in half and it’s enough for two very hungry people.
- 1 pound ground lamb
- ¼ cup onion, minced
- 1 teaspoon fresh rosemary, finely chopped
- 1 teaspoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- 1 egg, lightly beaten
- ½ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 2 tablespoons olive oil
- 2 cups jarred tomato sauce
- In a large bowl, mix the first 9 ingredients together until combined
- Form golf ball sized balls, rolling each between your hands
- Heat the olive oil in a large non stick pan over medium heat
- Brown the meatballs on each side. Don’t overcrowd the pan and brown the meatballs in batches, if necessary
- Once browned, remove the meatballs and set aside
- In the same pan, add the tomato sauce
- Using a wooden spoon, scrape the bottom of the pan to remove the browned bits
- Add the meatballs to the sauce stir gently to coat them in the sauce
- Simmer the meatballs in the sauce for about 15 minutes, or until the meatballs are cooked through
- Serve the meatballs on toasted bread (baguettes, hoagie buns or hot dog buns work great) and top with mozzarella cheese
