Tandoori Chicken Bites with Mint-Yogurt Dip

Sometimes a recipe is born out of nowhere….this is one such recipe. It was last minute call to surprise a friend on her birthday. It is like few of us planned to make and take something along…kind of potluck…As it was last minute call, the menu was decided in hurry burry….I took the charge of appetizers. As I have got less time to spending thinking, I decided to go with chicken satay, but as they were kids also in the group…I thought of making something which even a toddler can nibble easily along with diet conscious friends…..And in no time with a blank picture of the final recipe…I started playing with the ingredients…I chopped boneless bite size pieces of chicken breast and marinated with spice powders and masala.
By the time the bite size chicken pieces are getting marinating in the fridge, I got ready and packed all the necessary things for the small surprise party. Wrapping my kitchen apron around, I pulled the marinating chicken from the fridge and gently placed them in the baking tray by greasing it with Fortune Rice Bran Oil, which I received to review few days back. I choose to bake my chicken bites using this oil for two reasons…one is the health factor as this oil is coming from the ‘bran’, the thin brown layer which is present on the unpolished grains. This oil is enriched with heart friendly micronutrient Oryzanol. This oil is enriched with a gamut of nutrients and is good for heart, immunity, skin and hormones. The other is to find out, is there any difference in the taste of the recipe, that too a non-vegetarian one, when baked in.

Let me tell you, no one in the potluck can find that these tandoori chicken bites where made with less than 2 tbsp. of oil and that too a ‘Heart Healthy Fortune Rice Bran Oil’ is used in baking these. Everyone loved these bites and these vanished in no time and kids demanded for more….I promised to make this next time when they are coming my place for a play date with Lil’M. Healthy Food, Happy Faces and Hearty Hours……Life is always good with friends….Enjoy life and make this simple but indulging recipe soon…….

INGREDIENTS:

  • 1 cup bite size boneless Chicken pieces
  • ½ cup Yogurt
  • ½ tbsp. Ginger-Garlic paste
  • 1 tbsp. Tandoori Masala
  • ¼ tbsp. Turmeric powder
  • ½ tbsp. Red chili powder
  • 1 tbsp. Lemon juice
  • ½ tbsp. Salt
  • 2 tbsp. Fortune Rice Bran Oil
PREPARATION:

  • Wash boneless chicken pieces thoroughly with enough water and place them in a strainer.
  • In a bowl beat yogurt and mix in ginger-garlic paste, tandoori masala, turmeric powder, red chili powder and salt.
  • Now gently squeeze the chicken pieces with your fingers and coat them with the above masala.
  • Leave the marinated chicken pieces in the fridge for 1-3 hours or if you have time you can leave it in fridge overnight.
  • Pre-heat the oven to 200C and brush the baking tray with fortune rice bran oil. Place the marinated chicken pieces on the prepared baking tray leaving gap in between the pieces. Bake for 15 minutes by covering with a foil.
  • After 15 minutes, take the baking tray out and turn each piece and bake for another 10-15 minutes by drizzling another spoon of oil over the top.
  • Sprinkle lemon juice and serve warm with mint-yogurt dip.
  • Add love to make these chicken bites taste ‘Yummy’.
MINT-YOGURT DIP:

INGREDIENTS:

  • 1 cup Mint leaves
  • ½ cup Coriander leaves
  • 1 cup Yogurt, beaten
  • 2 cloves Garlic
  • 1 tbsp. Lemon juice
  • 2 Green chilies
  • Salt
  • ¼ tbsp. roasted Cumin powder
PREPARATION:

Blitz all the ingredients except yogurt in a food processor until smooth and mix in yogurt. Serve as dip.
