Microwave Carrot Cake with Chocolate Cream Cheese Frosting

Ufff….they are so many ‘C(s)’ in the recipe name…isn’t it? You know alphabet ‘C’ is my favourite. Wondering why??? I love Camera, Car, Computer, Chocolates, Cookies and Cakes. Latest addition to this is ‘Cream Cheese’. During my recent trip to grocery store, mistakenly I picked a pack of cream cheese thinking cheese spread…as it was lying in the same compartment.

Today when I was about to make sandwiches I noticed I bought a pack of cream cheese instead of cheese spread. Wondering how this would taste like, I opened it and licked it by dipping my finger. I don’t know why but I liked it more than regular cream at the first go. For my first try, I tried it by spreading on sandwiches and grilling them. Everyone at home enjoyed this new taste (will share the recipe soon).

But as of now, I am going to share with you a simple but indulging recipe, which I can’t resist, relishing and sharing with you all, is Chocolate Cream Cheese (CCC) Frosting. After a very long time, I made carrot cake in microwave. I don’t know why I choose to make this combo of carrot cake and CCC frosting….but let me tell you, this is one of the match made in gastronomical heaven. As we all know microwave cakes are for instant consumption, frosting it is bit tedious job. But once in a while everything is fair in love and food…isn’t it??

So here is a finger licking recipe of quick and easy frosting, which blends perfectly with a carrot kissed microwave cake. What are you waiting for….? Just scroll down to check out this yum recipe….

EGGLESS MICROWAVE CARROT CAKE

INGREDIENTS:

1 cup all-purpose Flour
½ cup peeled and fine grated Carrots
3 tbsp. Oats powder
¾ cup Icing sugar
¼ tbsp. Baking powder
pinch Baking soda
pinch of Salt
½ tbsp. Cinnamon powder
½ cup unsalted Butter, at room temperature
1 tbsp. Vanilla essence
½ cup Milk, at room temperature

PREPARATION:

Sieve and combine flour, oats powder, icing sugar, baking powder, baking soda, cinnamon powder and salt. These are our wet ingredients.
In another bowl combine butter, milk and vanilla essence. Now gently fold in wet ingredients by adding spoon by spoon until everything combines well. Add in grated carrots and mix.
Grease microwave safe bowl and pour in the above batter. Tap gently to spread evenly. Microwave this for 4-5 minutes. When touched with your finger, the centre of the cake should spring back. Remove from microwave and leave to cool for 5-6 minutes. Carefully remove on to cooling rack and leave it to cool completely.
Add love to make cake taste ‘Yummy’.

CHOCOLATE CREAM CHEESE FROSTING

INGREDIENTS:

½ cup Cream cheese, at room temperature
2 tbsp. unsweetened Cocoa powder
½ cup unsalted Butter, at room temperature
1 tbsp. Vanilla essence
¾ cup Icing sugar

PREPARATION:

Swift cocoa powder and icing sugar and set aside.
Add cream cheese and butter to a bowl and beat until creamy. Slowly add in sifted cocoa powder and icing sugar mixture. Beat until well combined. Add in vanilla essence and beat until smooth and shiny.
Spread this over the above made microwave carrot cake and relish.
