Sausage and Peppers Pasta
I’m just popping in today to share this sausage and peppers pasta recipe and a quick update on all the goings-on around Girl Gone Gourmet, or I should say not-goings-on as you might have noticed it’s been quieter than normal around these parts lately. We’ve hosted family for the last couple of weeks, I’ve kept busy on a few blogging side projects, and the weather has been amazing, which means we’ve been outside enjoying life instead of inside staring at computer screens. My kitchen has never been cleaner.
So the timing is perfect for this simple dinner idea. I was sort of in love with the chicken and peppers on soft rolls that I made a few weeks ago, so I took that concept and changed things up a bit. I switched sausage for chicken, pasta for rolls and a white wine tomato sauce for a white wine butter sauce. See what I did there? Maybe next time I’ll toss the pasta with the chicken and pile the tomato-y sausage on rolls. Crazy!
It’s all simple stuff, but together it makes for a dinner that’s satisfying but surprisingly light thanks to the generous amounts of veggies. Plus it makes a lot which means leftovers. Which means lunch or dinner the next day is taken care of. Which means more patio-wine-sipping time.

- 1 tablespoon olive oil
- 4 sweet Italian sausages, sliced
- 3 bell peppers (any color), cut into strips
- 1 red onion, sliced thin
- ¼ cup white wine
- 1 can (15 ounces) tomato sauce
- 2 teaspoons dried Italian seasoning
- 1 teaspoon kosher salt
- ¼ teaspoon black pepper
- 8 ounces casarecce, or other short pasta
- 1 tablespoon chopped parsley, for garnish
- Boil the pasta according to package directions. Drain.
- In a large pan, heat the olive oil over medium heat. Add the sausage and brown it on all sides until cooked through. Remove the sausage from the pan.
- In the same pan, cook the peppers and onion until they soften.
- Add the wine to the peppers and onions and let it simmer until most of it evaporates. Add the tomato sauce, Italian seasoning, salt and pepper and,using tongs, toss everything together until the peppers and onions are coated in the sauce. Add the sausage and cooked pasta to the peppers and onions and stir to combine.
- Garnish with the parsley and serve.
