Thai Fried Chicken 泰式炸鸡腿
During my childhood days, my neighbours will brought home some of these fried chicken and khanom chan kuih whenever they travelled back from Thailand. These fried chicken normally came in medium size whole leg. The skin is still very tasty & crispy even after long hours drive from Hatyai, Thailand. Oh yeah, still pretty clear in mind. haha…… How could I not to give this a try ! Please read on for more.
Ingredients for marinade :
4 garlic cloves
4 coriander roots with stem
1-1/2 tspn salt
2 tspn coriander powder, toasted
1 TB sugar
pepper to taste
3 TB Thai fish sauce
**6 drumsticks
Method :
Place all ingredients together and blend into paste. Wash meat thoroughly then pad dry. Place drumstick into plastic bag and stir in the blended paste. Mix well then keep chilled overnight.
Ingredients for deep fry coating :
1/2 cup rice flour
1/2 cup all purpose flour
1 tspn baking soda
1 tspn salt
1/2 cup water
Method :
Mix together all ingredients till well cooperated. Next, dip in the drumstick for coating. Then fry them till golden brown.
This will take some time. Need to be really patient till it’s cooked and crispy brown.
Indeed the skin is extremely yummy and crispy. My boy likes it a lot but I still think these drumsticks are too big in size. Will pick the smaller one next round. Hope you guys will like it too. Enjoy !
