Apple Tea Cake 苹果蛋糕

I love to bake cakes with apples and you can find many apple cake recipes that I had shared with you on my blog. Here is an easy to bake apple cake that I adapted from here. This Apple Tea Cake with cinnamon fragrance is delicious and flavourful with fresh apple slices on top and a final touch of sprinkling of demerara sugar which is not overly sweet. Only one egg is needed in the recipe and mixing the ingredients is a breeze.  I must say it is quite a flat cake but nothing can stop me from having two slilces in a row with a cup of hot tea. Definitely a keeper recipe!

Apple Tea Cake
This Apple Tea Cake with cinnamon fragrance is delicious and flavourful with fresh apple slices on top and a final touch of sprinkling of demerara sugar

  • 80 g butter
  • 90 g caster sugar
  • 1 large egg lightly beaten
  • 1 tsp vanilla extract
  • 1/2 tbsp lemon juice
  • 150 g self-raising flour or cake flour + 2tsp baking powder
  • 1/2 tsp cinnamon powder
  • 2 red skin apples granny Smith
  • 10 g melted butter
  • 1 tbsp demerara sugar or coarse sugar
  • Preheat oven to 180 deg C. Grease a 8 inch (20 cm) springform pan, and line base with baking paper. 
  • Use an electric beater to beat butter and caster sugar until light and creamy. Slowly add in beaten egg and beat until combined, then beat in the vanilla and lemon juice.
  • Sift flour and cinnamon over butter mixture, and add milk. Use a rubber spatula to fold together until just combined; don’t over beat. Spread cake batter in prepared tin, and smooth the surface.
  • Core apples and cut into thin slices. Arrange apple slices on the batter. Bake for 35-40 minutes, or firm to a gentle touch in the centre. Brush warm cake with melted butter, and sprinkle with demerara sugar.
  •  Leave cake to cool down completely before removing it from cake pan.

  • 做法很简单的一款蛋糕。肉桂粉和苹果片散发出誘人的香氛,口感不腻。。再配上一杯红茶感觉特别的好!
  • 材料:
  • 80克 牛油
  • 95克 细砂糖
  • 1个 大鸡蛋, 打撒
  • 1茶匙 香草香精
  • 1/2汤匙 柠檬汁
  • 150克 自发面粉
  • 1/2茶匙 肉桂粉
  • 100毫升 牛奶
  • 2颗 红苹果
  • 10克 融化牛油
  • 1汤匙 原蔗糖或粗糖
  • 做法:
  1. 预热烤箱至摄氏160度。准备一个8寸(20cm)活动烤盘,底部铺纸备用。
  2. 用电动打蛋器把牛油和细糖打至松发。慢慢倒入蛋液搅打至均匀,加入香精和柠檬汁,搅匀即可。
  3. 筛入面粉和肉桂粉和倒入牛奶。用橡皮刮刀翻拌均匀即可(不要过度的搅拌)。将面糊倒入烤盘内抹平。
  4. 苹果去核切薄片铺排在面糊上。送入烤箱烤约35-40分钟左右或用手指轻轻按一下蛋糕中间感觉有一点硬度就可以了。
  5. 从烤箱取出蛋糕,趁热刷上融化牛油,撒上原蔗糖。蛋糕完全待凉后才脱模切片享用。
