Pom Pom Guacamole

Guacamole is basically a dish which originated in Mexico and is made from a mixture of avocado, tomatoes, onion, garlic and whatever spices or herbs one wants to use. While there are many varieties of guacamole, there are actually three distinct varieties of this dish. The first is the Spanish Guacamole which consists of roasted red peppers, scallions, cilantro and onions. The second, is the Mexican Guacamole which adds avocados and scallions. Finally, the third is the Molesguacamole which is as we have come to know in the United States consists of black beans and ground meat.
However today I am going to teach you how to make a Pom Pom Guacamole which originated in Africa and combines the flavors of guacamole with those of pomegranate juice and cinnamon. The result is a delicious guacamole which is bright, fruity and aromatic. To begin with it is important to buy small to medium size avocados as the avocados in Mexico are of much larger size than those which we eat in the United States. Guacamole made with larger avocados tends to taste, well, unripe.

Ingredients

  • 2 Avocados, halved, pitted and peeled
  • Lime juice
  • Lime zest
  • 1 garlic clove, finely chopped
  • 1 table spoon pickled ginger, finely chopped
  • 1 table spoon of brine from the jar of the picked ginger
  • Sea salt and pepper to the taste
  • 1 table spoon chilly flakes
  • green chilli (optional to taste)
  • 20 grams of freshly chopped coriender
  • 100 grams of pomegranate arils (keep extra for garnishing)
  • Optional half avocado rose for garnishing.
  • Optional 2 table spoon finely chopped dried mint

Instructions
  1. In a bowl mash the avocado and all other ingredients. You can use the pastel to make smooth paste if needed.
  2. Place the mixed guacamole in bowl and garnish with pomegranate arils, fresh coriander and mint.
  3. You can serve with chips or in a pita with thin flat breads.
