How Long to Roast Green Beans in the Oven

I love roasting green beans in the oven. It’s an easy way to make green beans delicious and satisfying. Seriously — no soggy green veggie here. Oven-roasted green beans have so much texture and taste, you’ll forget they’re good for you.

Below is a chart showing how long to roast green beans at different oven temperatures. Be sure you look past the timing chart, though — you’ll find essential tips for your best roasted green beans ever.

These cooking times will deliver a slightly charred, wrinkled green bean. You can extend or shorten the roasting window to suit your taste. If you like a crunchier, fresher green bean, shorten the time noted. If you prefer green beans with a heavier char and texture, lengthen the cooking time. The latter is my preference, so I usually extend these times by up to 5 minutes. 

You may also need to adjust the time for the thickness of the green bean. Since skinny beans take less time to cook, you’ll shorten your roasting time for petite beans.

How to roast green beans: Step by step Choose the right beans 

Choose fresh green beans that are crisp and vibrant in color. Look for beans that snap easily when bent.

Wash the beans thoroughly under running water and trim off the ends. You can leave the trimmed beans whole or cut them into bite-sized pieces, depending on your preference.

Oven-roasted green beans are an easy side dish. Simply toss the beans with oil and seasonings and bake.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  • 1 lb fresh green beans
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Instructions
  1. Preheat your oven to 400°F or 204°C.
  2. Wash and trim the ends of the green beans, if necessary.
  3. If you want super-easy clean-up, optionally line a rimmed baking sheet with foil. Place your green beans on the sheet. Drizzle the oil over the top. Add 1/4 teaspoon of each salt and pepper, or more to suit your taste.
  4. Using your hands, gently mix the ingredients, so the beans are coated with oil.
  5. Bake the green beans for 15 minutes and check for doneness. They can roast for an additional 10 minutes if you like them slightly charred and crispy.
Notes

You can experiment with other seasonings too. Try lemon pepper, Parmesan cheese, sliced almonds, or paprika. You can also roast them as instructed and then squeeze fresh lemon over the cooked beans.

Fun ways to add flavor to roasted green beans

Green beans can accept many flavors beyond olive oil, salt, and pepper. Below are three fun seasonings to try.

1. Add lemon and garlic

The tangy citrus and aromatic garlic complement the earthy flavors of the beans perfectly. All you do is mince the garlic and zest a lemon, then sprinkle these ingredients over the green beans along with olive oil, salt, and pepper. Roast as directed, and you’ll have a side dish that’s bursting with fresh flavors.

2. Add proteins 

Interested in making your roasted green beans a main course? Easy! Add protein-rich ingredients like toasted almonds, chickpeas, or Parmesan cheese, plus a dash of red pepper flakes to create a satisfying, nutritious meal. 

3. Add balsamic vinegar 

Another variation to try is balsamic roasted green beans. Toss the green beans with balsamic vinegar, olive oil, salt, and pepper. Roast as directed, and you’ll have a tangy and slightly sweet side dish that pairs well with a variety of main courses.

Reheating leftover roasted green beans 

To reheat leftover green beans, place them in an oven-safe dish, cover with foil, and bake at 350°F (175°C) for about 10 minutes, or until heated through. Alternatively, you can reheat them in a microwave-safe container in the microwave for 1 to 2 minutes.

Personally, I love leftover roasted green beans cold, straight out of the refrigerator. So try one this way first, before you spend time reheating them!
