SUNDAY, November 26th – Sunday Dinner at my Sister’s place
Most Sundays I have Sunday dinner at my sisters. It is usually Pot Roast. She accompanies it with a variety of tasty vegetables and we usually have some kind of dessert, usually sugar conscious because my father is a diabetic, unless it is a special occasion and then we will pull out all the stops.
This is a photo of my Instant Pot Pot Roast. Its very tasty and has a lush gravy. I also have a Classic Pot Roast for Two People recipe on here, which is what I would be cooking if I was at home and having a roast.
MONDAY, November 27th – Simple Scottish Tattie Soup
It was a cold and wet day and I decided to make myself some soup for my supper. Not just any soup though a Scottish Tattie Soup. Tattie is what the Scots call their potatoes and this soup is fantastic. With only a few simple ingredients. Leeks, onions, potatoes, carrots and some good stock. It is gluten free and dairy free and if you use veggie stock it is vegan and vegetarian friendly.
I had to take some over to a friend from church as well. She is a bit of a difficult person to please and she thought the soup was delicious according to our Compassionate Service Leader. I accompanied it with some Buttermilk Biscuit Muffins.
TUESDAY, November 28th – Meat Loaf and Scalloped Potatoes
I cooked my Vintage Menu on Tuesday. This week was from the Good Housekeeping Cookbook from 1963. I cooked Susans’s Meatloaf, Creamy Scalloped Potatoes, Baked Acorn Squash, Buttered Carrots and for dessert I had Fruitful Cobbler with cream.
It was all delicious. It was all simple. It all cooked in the oven at the same time, with the exception of the carrots. This menu reminded me very much of a meal that my mother might have cooked for us when I was growing up. It was really tasty and simple to make.
WEDNESDAY, November 29th – Dinner out with Dad
On Wednesday nights I usually go out for supper with my father and his friend Hazel at The Big Scoop. This week it was snowing and so Hazel didn’t go. Dad was still keen to go however and so we went. My sister joined us. Dad had a hotdog and chips and Cindy and I had the fish and chips. We are fairly predictable and seldom vary what we have.
I am sharing my recipe for a Pistachio & Lemon Dusted Tilapia recipe with you. It is a simple and delicious dish. You can actually use any mild flavored white fish for this. Tilapia is a very affordable fish option. In this case it is coated in a light pistachio nut and lemon zest coating and lightly fried in a bit of olive oil. More lemon is passed at the table. Perfectly cooked and of course very tasty!
THURSDAY, November 30th – Spicy Ranch Turkey Burgers
I love a good turkey burger. In fact I would choose a turkey burger over a regular burger any day of the week. My sister and I have seen some frozen Turkey Burgers at the Super Store that are intriguing us. Holiday Feast Burgers. They look tasty. Turkey and Stuffing Burgers. I need to make some space in my freezer.
On this day I had my Spicy Ranch Turkey Burgers. They really have lovely flavors. From the cool and creamy ranch slaw that gets tucked into the buns with the burgers, to the spiciness of the burger they are a real taste sensation! I just love them!
FRIDAY, December 1st – Chicken Pot Pie Casserole for two
I had some leftover Chicken Pot Pie Casserole for two in my freezer and thawed that out for my supper. It is always delicious. I accompanied it with a salad on the side. You can’t go wrong with this tasty casserole and a salad.
The filling is typical of any chicken pot pie filling, but instead of a crust it has flaky biscuits on top. I love biscuits on top of a pot pie and this one is sized perfectly for the smaller family. If you are wanting a larger version simply double or triple the ingredients.
SATURDAY, December 2nd – Skinny Mac & Cheese and salad
Macaroni Cheese has to be one of my favorite things to eat. Even the stuff in the blue box. I baked myself a small Skinny Mac & Cheese casserole. It has all of the flavors of a regular fat filled Mac & Cheese but with a fraction of the calories.
It uses whole wheat pasta for added fiber and replaces some of the macaroni with cauliflower florets to help cut back on the carbs. The sauce is low fat milk whisked together with low fat cream cheese, a bit of Parmesan and some cheddar. I like to top it with grated cheddar and some sliced tomatoes for added color and even more of my five a day!
With all of the indulgences of the holiday season upon us I really need to cut back a bit so that I won’t feel as guilty when I am chowing down on the fruit cake and Christmas cookies!
And there you have it! My meals of the week for the past week. Not so shabby and I get to do it all over again next week! I don’t think I eat that badly at all. I hope you will be inspired to want to cook and eat some of the same things in the week ahead! Lets all get cooking!
